Special Egg Curry





Ingredients

1. Irumban puli (Bilimbi) – 15 (cut into a thin round)
2. Egg – 5 cut into half
3. Coconut milk – 1(thick) & 2(thin)
4. Onion – half
5. Green chilli – 2
6. Kashmiri chilli powder – 2 tbsp.
7. Turmeric powder – 1tbsp
8. Coriander powder – 1 tbsp.
9. Garlic - 3 chopped
10. Ginger – some chopped
11. Shallots – 4
12. Curry leaves – 1 spring
13. Coconut oil – some
14. Salt – as needed
Method
1. In a pot add some oil once it heated put some garlic, ginger and green chilli and sauté well.
2. Add onion and cook till the onions turn soft add Kashmiri chilli powder, turmeric powder, coriander powder.
3. Add irumban puli (Bilimbi) mix well together with the masala and add thin coconut milk sauté well and add salt.
4. Bring this to a boil and check the irumban puli (Bilimbi) cooked or not, then add the thick coconut milk, stir a few times, without letting it come to a boil and switch off the flame. Drop the eggs in the curry.
5. Heat oil in a pan add some coconut oil once it heat add shallots and curry leaves mix well till the onion turn light brown then add the remaining Kashmiri chilli powder mix and switch off the flame. Pour on top of the egg curry.
6. Tasty egg curry is ready to serve, will be great with rice or chapatti. Enjoy the food.
